For those in search of gourmet flavours
In the traditional production process, harvesting typically starts in November. In November, olives start to fully ripen and they produce more oil. Harvesting continues throughout the winter.
"Early Harvest" is the name used for describing unripe olives harvested from September to October. "Cold Pressing" is a method in which olives never exceed 26°C during the pressing process.
